Rinse 1 cup of red lentils until the water runs clear and soak for at least 10 minutes.
Heat a saute pan to medium and add 2 tablespoons of vegetable oil.
Add 1 cup of finely diced yellow onion to the pan and cook until translucent.
Add 2 diced plum tomatoes, 3 minced garlic cloves, 2 tablespoons of tomato paste, 1 tablespoon of berbere spice, and 1 teaspoon of salt; cook down for about 5 minutes until the mixture turns deep red.
Add the drained lentils to the pan and toss to coat them with the mixture.
Pour in 3 cups of vegetable broth and bring to a boil.
Reduce the heat, cover the pan, and simmer for about 20 minutes, stirring halfway through.
