Preheat the oven to 180°C (350°F).
Cut the bread into half-inch slices.
Toast the bread slices in the preheated oven for 4 minutes.
In a pan, heat a little butter and add plain flour; cook until it changes color.
Add milk to the flour mixture and let it come to a boil, stirring until thickened.
Add cheese to the thickened milk mixture and let it melt; remove from heat and cool for 5-6 minutes.
Once cooled, add boiled yellow corn, finely chopped capsicum, finely chopped onion, salt to taste, mixed herbs, and black pepper; mix well.
Spread a thick layer of the mixture on the toasted bread slices.
Sprinkle a little mixed herbs on top of the cheese mixture on the bread.
Return the prepared bread to the oven at 180°C for another 5-6 minutes until done.
