Wash your hands.
Separate about 1/2 cup of the fatty broth from the pho.
Whisk 2 egg yolks in a bowl.
Slowly drizzle in the fatty broth while whisking until emulsified and fully incorporated.
Season the mixture with a pinch of salt.
Thinly slice some white onions and submerge them in cold water to reduce raw flavor.
Chop up some green onions, cilantro, and jalapenos.
Thinly slice the brisket from the pho.
Cut the French baguette in half.
Layer the sliced brisket over the French baguette.
Tile over some sliced provolone cheese on top of the brisket.
Broil the sandwich on low for a couple of minutes or until the cheese is melted.
Apply a generous amount of the pho butter onto the sandwich.
Top the sandwich with thinly sliced white onions, green onions, cilantro, and jalapenos.
Wrap the sandwich in parchment paper and cut in half, then decide it was better without the parchment paper.
Serve with a side of pho broth.
