Today, they are popular not only in Vietnam but also in various Asian communities around the world, often served with noodles or in hot pot dishes.

Cornstarch is a more common thickener and less expensive.
Prepare the marinade ingredients: combine 30 grams minced garlic, 110 grams fish sauce, 15 grams monosodium glutamate, and 250 grams cold water in a bowl.
If the water is not cold, add some ice to keep it cold.
Add 60 grams of tapioca starch and 15 grams of baking powder to the marinade and mix well until combined.
In a separate bowl, prepare 600 grams of lean beef and 600 grams of pork fat, ensuring the beef is trimmed of fat.
Grind the beef and pork fat together three times to ensure a fine texture.
Combine the ground beef and pork fat with the marinade mixture and mix thoroughly using your hands for about 5 minutes until well combined.
Place the mixture into a plastic bag, flatten it, and freeze it to keep it fresh until ready to use.
When ready to make the meatballs, remove the mixture from the freezer and let it sit for about 15 minutes to soften slightly.
Using a glove on one hand and a spoon or spatula in the other, scoop out portions of the mixture and shape them into meatballs.
Bring a pot of water to a boil, adding 1 teaspoon of salt for flavor.
Gently drop the meatballs into the boiling water and stir to ensure they are submerged.
Boil the meatballs for 15 to 17 minutes, adjusting the time based on the size of the meatballs.
Prepare a bowl of ice water to cool the meatballs after boiling.
Once cooked, transfer the meatballs to the ice water to stop the cooking process and keep them firm and white.
