It's often accompanied by fries and salad, making it a hearty meal enjoyed by families. This dish reflects the Portuguese love for simple yet flavorful ingredients. Today, Bitoque can be found in various restaurants across Portugal and has inspired adaptations in other countries, showcasing its universal appeal.

Start by preparing the marinade with Madeira wine, bay leaves, smoked paprika, and chopped garlic.
Coat the thinly sliced beef in the marinade and let it sit for a couple of hours.
Heat a pan and add olive oil.
Cook the marinated beef in batches, seasoning with kosher salt while cooking for a few minutes on each side.
Once the beef is cooked, remove it from the pan and add onions to caramelize in the remaining oil.
Deglaze the pan with more Madeira wine and add mustard, frozen lemon, softened butter, smoked paprika, black pepper, and salt to create the sauce.
Stir the sauce and taste it to adjust seasoning as needed.
While the sauce is finishing, cook French fries separately.
Fry 2 eggs, seasoning with salt and pepper, and attempt to flip them carefully.
Top the cooked beef with the sauce and drizzle piri piri sauce over everything before serving.
