Dal Dhokli

2 cups water
1/4 teaspoon turmeric powder
1 pinch hing (asafoetida)
1/2 teaspoon salt
1 tablespoon peanuts
1 tablespoon oil
1 tablespoon ghee
1 teaspoon mustard seeds
1 teaspoon cumin seeds
2 red chilies
1/2 green chili
a few curry leaves
2 medium-sized tomatoes
1 teaspoon red chili powder
1 teaspoon coriander powder
1 piece of jaggery (optional)
1 cup whole wheat flour (atta)
1/4 teaspoon turmeric powder
1/2 teaspoon chili powder
1/2 teaspoon cumin powder
1/4 teaspoon salt
1/2 teaspoon ajwain
2 teaspoons oil

Soak 1/2 cup of toor dal for about one hour.

In a pressure cooker, add the soaked dal and 2 cups of water.

Add 1/4 teaspoon of turmeric powder, a pinch of hing, and 1/2 teaspoon of salt to the cooker.

Add about 1 tablespoon of peanuts and mix well.

Pressure cook on medium flame for about 4 to 5 whistles.

Remove the cooked dal and keep it aside.

In a wide kadai, add 1 tablespoon of oil and 1 tablespoon of ghee.

Add 1 teaspoon of mustard seeds and 1 teaspoon of cumin seeds, and wait for the mustard seeds to crackle.

Add 2 red chilies and 1/2 slit green chili, along with a pinch of hing and a few curry leaves.

Add 2 chopped medium-sized tomatoes and mix well.

Add 1/4 teaspoon of turmeric powder, 1 teaspoon of red chili powder, and 1 teaspoon of coriander powder, and mix everything well.

Cook the tomatoes until they are mushy, then add 1/2 teaspoon of salt.

Add the cooked dal to the kadai and mix well, cooking on low flame for about 5 minutes.

Add a piece of jaggery for sweetness (optional) and mix well.

In a bowl, add 1 cup of whole wheat flour, 1/4 teaspoon of turmeric powder, 1/2 teaspoon of chili powder, 1/2 teaspoon of cumin powder, 1/4 teaspoon of salt, and 1/2 teaspoon of ajwain.

Add 2 teaspoons of oil and mix the dry ingredients.

Gradually add water while kneading the dough until it is soft, then let it rest for about 10 minutes.

Divide the dough into equal-sized balls and roll them out to a medium thickness.

Cut the rolled dough into diamonds using a pizza cutter or knife.

Heat the dal and if thickened, dilute with a little water until it boils.

Gently drop the dhoklis into the boiling dal in batches, avoiding sticking.

Close the kadai and cook for about 10 to 15 minutes on medium flame.

After 15 minutes, check the dhoklis which should be plumped up, and finish with chopped coriander leaves.
