1 tbsp oil
1 tsp ghee
1 piece cinnamon stick
4 cloves
1/2 tsp mustard seeds
1/4 tsp asafoetida
1/4 tsp turmeric powder
1 sprig curry leaves
2 tsp crushed ginger
green chilies to taste
1 large tomato
5 cups water
2 tsp salt
2 tbsp jaggery
1 tbsp tamarind pulp
1/2 tsp red chili powder
1 tsp garam masala
1 tbsp cumin powder
2 tsp coriander powder
lemon juice to taste
cilantro leaves for garnish

Wash and soak 1/2 cup of toor dal for 30 minutes, then drain.

In a pressure cooker, add the soaked dal, 2 tsp raw peanuts, 1/8 tsp fenugreek seeds, and 2 cups of water. Close the lid and cook on high heat until it whistles 2-3 times.

Prepare the dough by mixing 1 cup of whole wheat flour, 1 tbsp chickpea flour, 1/4 tsp turmeric powder, 1/2 tsp salt, and 1/2 tsp red chili powder in a bowl. Add 1 tbsp oil and mix well.

Gradually add 1/4 cup plus 2 tbsp warm water to the flour mixture to form a stiff dough. Cover and let it rest for about 20 minutes.

Once the dal is cooked, smash it down with a whisk until soft. In a separate pan, heat 1 tbsp oil and 1 tsp ghee over medium heat.

Add 1 piece of cinnamon stick, 4 cloves, and 1/2 tsp mustard seeds to the hot oil and let them pop. Then add 1/4 tsp asafoetida, 1/4 tsp turmeric powder, 1 sprig of curry leaves, and 2 tsp crushed ginger along with green chilies to taste. Mix well.

Add 1 chopped large tomato and cook for a minute. Then add 5 cups of water, 2 tsp salt, 2 tbsp jaggery, 1 tbsp tamarind pulp, 1/2 tsp red chili powder, 1 tsp garam masala, 1 tbsp cumin powder, and 2 tsp coriander powder. Mix and bring to a boil.

Once boiling, reduce the heat to medium-low and keep it boiling while you prepare the dough strips.

Divide the rested dough into 3-4 balls, flatten each ball, and roll out into thin sheets. Cut into diamond shapes.

Drop the dough diamonds into the boiling dal mixture, ensuring they don't stick together. Cover and cook for approximately 30 minutes, stirring occasionally.

Check the doneness of the dough by tasting a piece. If it tastes raw, cook longer and add water if needed. The texture should be doughy, not raw.

Add lemon juice to taste before serving, and optionally drizzle with oil or ghee. Garnish with cilantro leaves.
