Peel and cube the sweet potatoes.

Add in brown sugar, granulated sugar, whole milk, 2 well beaten eggs, ground ginger, ground nutmeg, a little bit of cinnamon, vanilla extract, and a pinch of salt.

Add the pudding mixture to a well greased small baking dish and top with chopped pecans if desired.

Place into a preheated oven at 350°F and bake for about 30 to 35 minutes until set and the top is golden.
