Grate 1 kg of sweet potato.

Grate 250 g of pumpkin.

Peel and grate ginger, using about 2 teaspoons.

In a large bowl, mix the grated sweet potato, pumpkin, ginger, and coconut with melted butter.

Add 250 ml of water and 250 g of castor sugar to the bowl.

Add 1 teaspoon of vanilla essence and 0.5 teaspoon of nutmeg to the mixture.

Pour the mixture into two greased flan or pie dishes.
