Pork Shoulder Braise

The slow cooking method allows the rich flavors to meld beautifully, creating a comforting meal that highlights the country's culinary traditions. Chicken thighs offer a leaner option, while pork butt is often less expensive.

Grape juice provides sweetness without alcohol, while vinegar adds acidity.
Heat olive oil in a large pot over medium heat until shimmering.
Season pork shoulder with salt and black pepper.
Sear pork shoulder in the pot until browned on all sides, about 8-10 minutes.
Remove pork from the pot and set aside.
Add chopped onion, garlic, carrots, and celery to the pot; sauté until softened, about 5 minutes.
Stir in paprika and cumin; cook for 1 minute until fragrant.
Add red wine to deglaze the pot, scraping up browned bits, and simmer for 2-3 minutes.
Return pork to the pot; add tomatoes, bay leaves, thyme, and chicken broth.
Bring to a simmer, then cover and reduce heat to low.
Braise for 2-3 hours, until pork is tender and easily shredded.
Remove pork from the pot and let rest for 10 minutes before shredding.
Skim excess fat from the braising liquid and adjust seasoning if necessary.
Serve shredded pork with sauce and garnish with fresh parsley.
