Preheat the pellet grill to about 376°F.
In a stand mixer, combine the entire packet of cheddar bay biscuit mix with one block of softened cream cheese.
Add 1 pound of breakfast sausage to the mixer.
Incorporate 1.25 cups of shredded cheese into the mixture.
Add optional ingredients: 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and 1 tablespoon of chicken powder.
Mix on low speed until all ingredients are well combined, scraping down the sides as necessary.
Use a cookie scoop to portion out the mixture onto a greased baking sheet.
Shape the mixture into balls and place them on the baking sheet.
Place the baking sheet in the preheated pellet grill and set a timer for 10 minutes.
After 10 minutes, check the internal temperature of the sausage balls with an instant-read thermometer.
If the temperature is not at least 200°F, continue cooking for an additional 5-7 minutes, checking periodically.
Prepare a honey mustard sauce by mixing together 1/2 cup mayonnaise, 2 tablespoons yellow mustard, 1 teaspoon dijon mustard, 2 tablespoons honey, and 1/2 tablespoon lemon juice.
After cooking for about 20 minutes total, remove the sausage balls from the grill and let them rest for 5 minutes before serving.
