Boil water in a pot over medium heat.
Add the rose hips to the boiling water and simmer for 30 minutes.
Strain the mixture through a fine sieve to extract the liquid.
Return the liquid to the pot and add sugar, lemon juice, and spices.
Stir the mixture and bring to a gentle boil.
Dissolve cornstarch in a small amount of water and add to the soup, stirring constantly.
Cook for an additional 5 minutes until slightly thickened.
Remove from heat and let cool slightly.
Serve warm or chilled, garnished with a dollop of cream and fresh mint.
