Barley Dosa

1/2 cup barley
1/2 cup kodo millet (varagu) or idli rice
1/4 cup urad dal
1 tblsp poha (aval)
oil to make dosa

In a wide bowl, add barley, millet (or idli rice), urad dal, and poha.

Wash and soak them in water for 4-5 hours (or overnight).

Drain the water and grind into a smooth paste using a mixie jar or grinder.

Transfer the batter to a bowl and add salt, mixing well with hands.

Keep the batter aside for 5-6 hours to ferment.

Add little water to adjust the consistency and mix well.

Heat a dosa pan.

Pour a ladle of dosa batter and spread it on the pan.

Drizzle little oil on top.

Once cooked on one side, flip to the other side and cook for a few seconds.

Take it out from the pan and repeat for the rest of the batter.
