Peel and core the pineapple, then cut it into rings or wedges.

In a bowl, mix brown sugar, cinnamon, and salt.

Brush the pineapple slices with melted butter and sprinkle the sugar mixture on both sides.

Place the pineapple on the grill or in a baking dish.

Grill or roast the pineapple for 3-4 minutes on each side until caramelized and golden brown.

Remove from heat and drizzle with lime juice and vanilla extract.

Let cool slightly before serving.
