1

In a large mixing bowl, add flour, salt and sugar. Mix well and make a hole in the centre.

2

Add water, egg and oil. Mix well to make a soft, workable dough.

3

Knead gently for about 3 minutes. Add small amounts of flour if the dough becomes too sticky, but not too much because we want a pliable dough that remains a bit sticky.

4

Cut the dough into 6 pieces and form into balls.

5

Place the balls into a bowl with a small amount of oil. Coat the balls with oil.

6

Cover the bowl and put it in fridge overnight.

7

Remove the balls from the fridge and put place them on an oiled surface.

8

Flatten the balls as thin as possible, by hand with oil or by using a rolling pin.

9

Spread with butter and form into thin, long rolls (as long as possible).

10

Wrap the dough and twist and pile into a knot shape. Do the same for all balls.

11

Heat a non-stick pan on medium heat.

12

Oil the counter surface again. Using a rolling pin, flatten the first ball created above to about 1 mm thick.

13

Grill 1 – 1 ½ minutes until golden brown. (While this roti is cooking, prepare the next one for frying)

14

Turn and grill another 1 – 1 ½ minutes until golden brown.

15

Remove and place on the counter.

16

Slap on four sides to release the air bubbles.
