4 cups flour
1 cup grated coconut
1/2 cup pure coconut oil
2 tablespoons dry instant yeast
1 teaspoon salt
2 tablespoons sugar
2 cups coconut milk
1/4 teaspoon freshly grated nutmeg

Combine all the dry ingredients (flour, grated coconut, dry instant yeast, salt, sugar, nutmeg) in a bowl.

Use your hands to mix the grated coconut with the dry ingredients, keeping fingers loosely apart for better incorporation.

Melt the coconut oil in the microwave until it reaches the consistency of room-temperature butter and add it to the mixture, incorporating it fully with your fingers.

Add 2 cups of coconut milk to the mixture and combine until it forms a dough.

Transfer the dough to a floured surface and knead for 10 minutes.

Cover the dough with a damp kitchen towel and let it rise for about 45 minutes.

After 45 minutes, punch down the dough and knead it again for about 2 to 5 minutes.

Shape the dough into your desired form (round, rectangular, or rustic) and cover it again with a damp kitchen towel to rise for another 30 minutes.

Preheat the oven to 350 degrees Fahrenheit.

Bake the dough for about 40 minutes or until golden brown.
