coconut milk

🥗Healthier: light coconut milk

💰Cheaper: evaporated milk

Light coconut milk reduces calories while maintaining creaminess.

smoked herring

🥗Healthier: smoked mackerel

💰Cheaper: canned sardines

Canned sardines are more affordable and still provide a similar flavor.

1

Gather all the ingredients: onion, hot pepper, garlic, green onions, ripe plum tomatoes, salted smoked herring, fresh thyme, black pepper, coconut milk, flour, yeast, brown sugar, salt, and melted butter.

2

Rinse the salted smoked herring under cold water to remove excess salt.

3

Boil the smoked herring in a medium pot filled with water to cover it, allowing it to cook for a few minutes.

4

After boiling, drain the herring and shred it, removing any bones as necessary.

5

In a pot, heat a couple of tablespoons of oil and add diced onion, cooking until translucent.

6

Add minced garlic and diced hot pepper to the pot, cooking for one minute.

7

Stir in the shredded smoked herring and cook for one more minute to combine flavors.

8

Add chopped tomatoes and fresh thyme to the pot, stirring well.

9

Cover the pot and allow the mixture to cook on high heat for about 15 minutes, checking every five minutes until the tomatoes break down.

10

Taste the mixture for salt and add black pepper if desired.

11

Once cooked, remove from heat and set aside.

12

To make coconut milk, strain two cups of grated frozen coconut to extract the milk.

13

Warm the coconut milk slightly as it will be used with yeast.

14

In a mixing bowl, combine 4 cups of flour, 2 teaspoons of yeast, 2 tablespoons of brown sugar, and a teaspoon of salt.

15

Mix the dry ingredients together, then add the grated coconut and melted butter, mixing until combined.

16

Gradually add the warm coconut milk, kneading the dough until smooth.

17

Form the dough into a ball and brush with oil to prevent drying, covering it to let it rest until doubled in size (about 20 minutes).

18

After resting, shape the dough and place it on parchment paper in a tray, pressing it out to desired thickness.

19

Let the shaped dough rest for another 20 minutes while preheating the oven.

20

Bake the dough in the oven for 20 to 25 minutes, checking after 20 minutes for doneness.

21

Once baked, brush the hot coconut bake with butter.
