Make lemongrass puree by blending 2 tender cores of lemongrass, 1 small shallot, 4 chopped garlic cloves, 2 tbsp. vegetable oil, and 1/3 cup sugar until smooth.

In a mixing bowl, combine 1½ tsp. ground white pepper, a pinch of salt, ¼ cup fish sauce, and about ¼ cup of the lemongrass puree to create the marinade.

Marinate the 2 lbs pork chops in the marinade for at least 30 minutes.
