Shito, a spicy sauce from Ghana, is a beloved condiment often served with rice, fried plantains, or grilled meats. Its origins are rooted in the coastal regions, where dried fish is a staple. Traditionally, families prepare Shito in large batches to enjoy throughout the week. Today, it has gained popularity beyond Ghana, often featured in West African restaurants worldwide, celebrated for its bold flavors and versatility.

Blend dried herrings into a smooth powder, leaving some texture.
Blend onions, spring onions, ginger, garlic, and vegetable oil together instead of water.
Pour the blended mixture into a pot and cover it to avoid burns, stirring consistently.
After a few minutes, add tomato paste and mix thoroughly, frying for 30 to 45 minutes.
Add powdered chili and chili flakes, stirring continuously to combine.
Add more vegetable oil to loosen up the sauce as needed.
Introduce the powdered dried herrings, stirring until it absorbs the oil.
Add one seasoning cube and a pinch of salt, stirring to combine.
Taste the sauce to ensure it is to your liking and adjust if necessary.
Once the sauce has turned black and thickened, turn off the stove and let it cool before storing in an airtight container.
