Combine soy sauce, hoisin sauce, Chinese five spice powder, honey, rice wine, red food coloring, minced garlic, grated ginger, black pepper, sesame oil, and sugar in a bowl to create the marinade.

Place the pork shoulder in a resealable bag or shallow dish and pour the marinade over it, ensuring the pork is well coated.

Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to penetrate.

Preheat the oven to 375°F (190°C).

Remove the pork from the marinade, reserving the marinade for later use.

Place the pork on a rack in a roasting pan and roast for 30-40 minutes, basting with the reserved marinade every 10 minutes.
