Roast the moori: If your puffed rice is not crispy, dry-roast it in a pan over low heat for a few minutes until crunchy.
Fry the additions: Sauté groundnuts (peanuts) in a little oil until golden brown. You can also fry other ingredients like cornflakes, roasted gram, or cashews.
Combine the mixture: In a large bowl, combine the roasted moori with the fried peanuts and other nuts.
Add spices: Toss with salt, red chili powder, black salt, and roasted cumin powder. You can also include a dash of chaat masala or dried mango powder (amchur).
Prepare the cashew powder: Add the cashew nuts to a clean, dry mixer or food processor and sift to remove lumps.
Make the sugar syrup: Stir sugar and water until dissolved, boil for 2–3 minutes until it reaches a one-string consistency.
Cook the kaju katli mixture: Reduce heat, gradually add sifted cashew powder, stir continuously for 5–10 minutes until it forms a soft dough.
Knead and roll the dough: Transfer to a surface, knead gently until smooth, roll out to ¼ inch thickness.
Cut the katli: Cut the rolled dough into traditional diamond shapes.
Prepare the peanuts: Dry roast peanuts until crunchy, cool, peel, and grind to a coarse or fine powder.
Make the jaggery syrup: Melt jaggery with water, stir until melted, strain if needed.
Combine and set the burfi: Add ground peanut powder, mix well, and if making soft burfi, add milk and ghee, cook until thick.
