Pour 300 grams of water into a mixing bowl.

Add 100 grams of sourdough starter and mix with a spatula.

Add 400 grams of bread flour and 8 grams of salt, mix with a dough whisk.

Use hands to mix well, then let the dough rest for one hour covered with a towel.

Stretch the dough to add tension and cover again, letting it rest for about 4 hours.

Shape the dough into two rolls, letting it rest for 10 more minutes covered with a towel.

Add paprika powder to the dough for flavor, then shape it into a long roll.

Place the dough on a floured towel and let it proof overnight or for about 4 hours at room temperature.

Transfer the dough to a pizza peel lined with parchment paper and score the surface.

Place in a preheated oven at 450 degrees Fahrenheit with a pizza steel and add steam by placing ice cubes in a hot cast iron.

Bake for about 25 minutes or until golden brown.

While the bread cools, make chimichurri sauce by chopping parsley and garlic, adding to a mixing bowl.

Add 1 cup of olive oil, 1 cup of lime juice, red white vinegar, salt, pepper, and red chili flakes, mixing well until very liquid.

Cook the chorizo or sausage on the grill and toast the inside of the bread.

Add chimichurri to both sides of the sausage, being careful of flames from the oil.
