Goat Butter

Cultural Context

Goat butter is a specialty product made from the cream of goat's milk, often sought after for its unique flavor and richness. In many cultures, particularly in rural areas, goat butter is cherished for its health benefits and is used in various traditional recipes. While it's less common than cow's milk butter, it has gained popularity among those seeking alternative dairy options. Today, goat butter is celebrated for its distinct taste and is increasingly found in gourmet kitchens and specialty stores.

1

Take a jam jar out of the freezer containing cream saved over a couple of weeks.

2

Retrieve goat milk from yesterday's milking.

3

Skim the cream off the top of the milk and add it to the jam jar of cream.

4

Put the remaining milk back in the fridge for other uses.

5

Let the cream in the jam jar defrost in the fridge for a couple of hours.

6

Shake the jam jar vigorously to turn the cream into butter, using a time lapse to show the process.

7

After about 2 minutes of shaking, notice the cream has thickened and is no longer runny.

8

Continue shaking until the buttermilk separates from the butter, straining off the buttermilk.

9

Shake a little longer to remove more buttermilk, until the butter forms a smooth lump.

10

Transfer the butter into a bowl and optionally add salt for salted butter.
