Gond Ladoo

1/4 cup + 3 tbsp ghee
1/4 cup almonds
1/4 cup cashew nuts
3 tbsp pistachio
2 tbsp gond (edible gum)
1 cup wheat flour (atta)
1/2 cup khandsari sugar or jaggery
1/2 tsp cardamom powder

Heat ghee in a pan over low heat.

Add gond to the pan and fry until it puffs up. Remove and set aside.

In the same pan, add whole wheat flour and roast until it turns golden brown and aromatic.

Add the fried gond back to the pan along with chopped nuts, cardamom powder, and salt. Mix well.

In a separate pan, melt jaggery with a little water until it dissolves completely.

Pour the melted jaggery into the flour mixture and mix until combined.

Allow the mixture to cool slightly, then grease your hands with ghee and shape the mixture into small round balls (ladoo).

Let the ladoos cool completely before serving.
