In a pot, heat vegetable oil over medium heat. Add minced garlic and sliced onion, sauté until fragrant.

Add the sliced beef brisket to the pot and cook until browned.

Stir in ginger, turmeric, coriander, and cumin. Cook for another 2 minutes to release the spices' aroma.

Pour in the beef broth and bring to a boil. Reduce heat and let it simmer for about 30 minutes until the beef is tender.

In a separate pot, cook the egg noodles according to package instructions. Drain and set aside.

Once the beef is tender, season the broth with salt and pepper to taste.

To serve, place a portion of egg noodles in a bowl, ladle the hot beef broth and beef over the noodles.

Top with halved boiled eggs, chopped green onions, and fresh cilantro.

Serve with lime wedges on the side for squeezing over the dish.
