Bring 3 cups of water to a boil in a saucepan.

In a large bowl, add 1 cup of cornmeal and a bit of the boiling water, stirring to avoid lumps.

Transfer the cornmeal mixture back to the saucepan with the boiling water.

Continue stirring constantly to prevent lumps as it cooks.

Add 1/2 cup of almond milk and stir to combine.

Add sugar to taste and stir well.

Add 1/4 teaspoon of cinnamon and optional raisins, stirring to mix in.

Cook until thickened, stirring frequently, then let cool slightly before serving.
