Add the remaining 2 cups of water and 2 cups of coconut milk.

Bring the mixture to a boil over medium-high heat.

Set the heat to low and stir the cornmeal paste.

Cook the porridge for 15-20 minutes, stirring frequently.

Add 4 tablespoons of sweetened condensed milk (or use maple syrup or agave nectar for vegan).

Stir in 1/4 teaspoon of ground cinnamon, 1/4 teaspoon of ground nutmeg, and 1/2 teaspoon of vanilla extract.

Transfer to a serving bowl and top with your choice of toppings.

Serve it hot or chilled.
