Strain the curds using muslin cloth and a strainer.
Squeeze out excess liquid and place curds under a weight to drain completely.
Knead the curds until smooth and less crumbly.
Heat the curds gently in a non-stick pan.
Add icing sugar to the curds and mix until dissolved.
Add crushed saffron and knead again to incorporate.
Portion the mixture into bite-sized bowls.
Top each portion with a sliver of pistachio.
