Gujiya Sandesh

Cultural Context

Originating from the Indian subcontinent, Gujiya Sandesh is a delightful fusion of traditional sweets. Gujiya, a crescent-shaped pastry filled with sweetened chhena, is often prepared during festivals like Holi and Diwali. Sandesh, a Bengali delicacy, celebrates the rich dairy culture of India. This dessert combines the best of both worlds, bringing together flavors and textures that are cherished in Indian cuisine. Today, Gujiya Sandesh is enjoyed at celebrations and gatherings, symbolizing joy and festivity.

1

In a mixing grinder, add 4 tablespoons of sugar and 2 cardamom pods and grind them together.

2

In a non-stick pan, melt 1 tablespoon of ghee.

3

Once the ghee is melted, add 1/2 cup of milk and warm it slightly.

4

After warming the milk, add 1 cup of milk powder and mix well to avoid lumps.

5

Cook on low flame for 2-3 minutes.

6

After 2 minutes, add the previously prepared sugar and cardamom powder mixture and mix well.

7

Continue cooking on low flame until it forms a dough-like consistency and doesn't stick to the pan.

Turn off the heat and grease a plate with a little ghee.

9

Transfer the dough onto the greased plate and spread it out, allowing it to cool slightly.

10

Once cooled, grease your hands with a little ghee.

11

Take small portions of the dough and roll them into balls, shaping them into gujiya.
