Put red meat (beef) in a pressure cooker with salt, sichuan pepper, and 1 whole garlic.

Add 500 ml water, cover, and cook for 20 minutes under medium pressure.

Remove the meat, slice it, and keep the stock.

Prepare round slices of tomatoes and chop ginger finely.

Cut lots of green chilies and round slices of onions.

Heat a pan with vegetable oil and fry the meat slices for 1-2 minutes until colorful.

Remove the fried meat and squeeze out the flesh of the boiled garlic into a bowl.

In the same pan, add onion rings and caramelize them on low flame.

Add chopped ginger and red chili powder, then quickly stir in tomato slices.

Add the meat stock and lots of chilies, then add the garlic flesh and boiled potato.

Slowly add the meat slices and some salt, cooking for another 15 minutes.

Cover and simmer for 3-4 minutes.

Add cottage cheese and cover, cooking for 1-2 minutes until melted.

Serve garnished with ginger juliennes.
