1/4 cup water

Heat 2 tablespoons of avocado oil in a pot over medium-high heat for about 2 minutes.

Add 4 to 5 cloves of sliced garlic and sauté for 2 to 3 minutes until the garlic turns a little brown.

Add a little bit of salt to the garlic.

Add 5 or 6 dried red chilies and sauté for 1 to 2 minutes.

Add 1 and 1/2 pounds of fresh oyster mushrooms to the pot.

Add 1/2 cup of fresh farmer's cheese and 3 slices of American cheese to the mushrooms.

Pour in 1/4 cup of water, ensuring not to exceed this amount.

Cover the pot with a lid and cook for 5 to 6 minutes.

After 6 minutes, open the lid and let it cook for another 3 to 4 minutes.

After 3 to 4 minutes, add some fresh scallions and optionally more garlic or cilantro.

Cook for another 3 minutes, then stir and taste for salt, adding more if needed.

Turn off the flame when ready and serve as a side dish with rice or roti.
