Vegetarian Thenthuk

Make a dough with 2 1/2 cups of maida, ensuring it's neither hard nor soft.

Apply a little oil to the dough, cover it, and set it aside to prepare other ingredients.

Mince 5-6 garlic cloves, dice 1/2 tomato, chop 1 spring onion, dice 1/2 onion, chop 1 medium carrot, slice 1 tiny radish, and chop 1 small cabbage.

Spread some flour over the countertop and roll out the dough to make thin flat bread, approximately 1cm thick.

Cut the flat bread into long slices and then into small squares, adding flour to prevent sticking.

Heat 2-3 tsp of cooking oil in a pan and fry the diced tomato for 2-3 minutes.

Add the minced garlic and diced onion to the pan and mix well, frying for 3-4 minutes.

Pour in 2 1/2 cups of water, cover with a lid, and bring to a boil.

Add the chopped carrot and radish, cover again, and cook until they are half boiled.

Add the noodles to the pan and stir well, then add the chopped cabbage, red chilli powder, and salt to taste.

Boil for an additional 5 minutes, then taste and adjust salt as needed.

Garnish with spring onions and serve, optionally sprinkling black pepper on top.
