300g firm tofu
1 clove garlic
1 piece ginger
5cm green onion
1 red chili
1/2 tablespoon sesame oil
1 cup bonito dashi
1 1/2 tablespoons Kikkoman soy sauce
2 tablespoons Manjo mirin
2 tablespoons Manjo sake
1/2 tablespoon potato starch
1 tablespoon water

Chop half of the green onion finely and cut the remaining into small rounds. Cut the tofu into 2cm cubes.

In a frying pan, add sesame oil and ground pork, and sauté over medium heat for 2 minutes.

Add garlic, ginger, chopped green onion, and red chili, and sauté until fragrant, then add the dashi and simmer for about 1 minute.

Add the bonito dashi and the tofu from step 1, and simmer for about 3 minutes.

Turn off the heat, mix the ingredients from (B) and pour it evenly over the frying pan. Lightly mix and turn the heat back on, simmering until bubbling over medium heat.

Serve in a dish and top with the sliced green onion.
