Roast 2 tablespoons of white sesame seeds until golden and fragrant.

Add 2 teaspoons of ghee to the pan and toast 2 cups of freshly grated coconut for about 5 minutes until dry.

Add 1 cup of jaggery to the coconut and mix on low heat until melted.

Stir in 1 teaspoon of cardamom powder and add the toasted sesame seeds (optional).

Finish with 1/2 teaspoon of ghee and set the filling aside.

In a mixing bowl, combine 2 cups of kurokata flour and 1/2 teaspoon of salt.

Add 2 teaspoons of gingerly oil and mix.

Gradually pour in hot water while mixing to cook the flour instantly.

Knead the dough until well combined, adding a teaspoon of oil as needed.

Grease a modak mold with oil and press some dough into the mold to shape it.

Add the coconut filling in the center and seal with more dough.

Gently open the mold to reveal the shaped modak.

Grease a steaming tray and place the modaks on it.

Steam the modaks for about 10 minutes on medium flame.
