Coarsely chop the onion, celery, and carrots.
Melt a knob of butter in a large pot.
Add the chopped vegetables to the pot and cook slowly until soft and fragrant, without letting them get any color.
Coarsely chop the fresh tomatoes and add them to the pot, seeds and skin included.
Add tomato paste and stir it in, cooking for a minute or two.
Add chicken stock paste for flavor.
Bundle the rosemary, bay leaves, and thyme together and add to the pot.
Pour in enough water to cover all the vegetables.
Bring to a simmer and let cook for 40 to 60 minutes.
In a separate bowl, mix 500 g pork and veal mix with 40 g breadcrumbs, salt, and pepper.
Roll the mixture into small meatballs.
Bring a pot of water to a boil with chicken stock paste.
Carefully drop in the meatballs and cook until firm and cooked through.
Remove the bundle of herbs from the soup before blending.
Blend the soup until smooth.
Pass the blended soup through a fine sieve to remove seeds and skin.
Carefully add the meatballs to the soup with a spoon, avoiding splashes.
Bring the soup back to a brief boil before serving.
