Rack of Lamb with Dairy-Free Pesto

The addition of dairy-free pesto not only enhances the dish with fresh herb flavors but also caters to those avoiding dairy, reflecting modern dietary preferences. Today, variations of this dish can be found in restaurants and homes alike, often served with seasonal vegetables or a light salad.

Make sure the food processor is locked into place.
Add 1 cup of basil leaves to the food processor and cover it.
Pulse the basil leaves.
Add garlic cloves to the bowl of the food processor and pulse a few times.
Add pine nuts and pulse a few times again.
Scrape down the sides of the bowl with a spatula.
Add a little lemon juice to the mixture.
Replace the top of the food processor and pour in the olive oil while the machine is running.
Process until all ingredients are incorporated, scraping down the sides again as needed.
Process for one more minute.
Spread the pesto on the lamb chops, starting with the back side.
Sprinkle black pepper over the front of the lamb chops, then flip and do the same on the back.
Spread pesto over as many areas of the lamb chops as possible, including the ends and bones.
Add breadcrumbs on top of the lamb chops until it feels right.
Place the lamb chops in the oven and bake at 400°F for about 25 minutes.
