Soak dried pho noodles for 30 minutes.

Toast coriander seeds, shallots, ginger, Ceylon cinnamon, cloves, star anise, and cardamom in a pan until aromatic.

In a pot, add 2.8 litres of water, 2 tablespoons of salt, and 2 tablespoons of sugar.

After 30 minutes, add the parboiled bones and short ribs to the pot.

Cook on low heat for 2 hours, allowing the broth to simmer.

After 2 hours, skim off the fats from the broth.

Let the ribs cool in water, then slice them as thin as possible.

Mix 1.5 tablespoons of salt and 1.5 tablespoons of sugar in a bowl.

Microwave each bowl for 1 minute to heat up.
