1 tbsp lemon juice
2 tbsp water
3 to 4 tbsp erythritol
1/2 tsp strawberry essence

Strain the mixture into molds to remove any solids.

Refrigerate for at least 4 hours or until set.

To serve, dip the molds in warm water for a few seconds to loosen the panna cotta.
