Start by mincing 1 shallot and 2 cloves of garlic.
In a bowl, combine 1 pound of ground lamb, minced shallot, minced garlic, and 1 tablespoon of fresh oregano.
Add 1 tablespoon of fresh dill, red pepper flakes, onion powder, garlic powder, salt, and black pepper to the mixture.
Heat a 12-inch cast iron skillet over medium heat.
Form the lamb mixture into 1-inch meatballs and place them in the skillet.
Sauté the meatballs for about 8 to 10 minutes, turning frequently until they feel done but not overcooked.
Remove the meatballs from the skillet and set aside.
In the same skillet, add 1 tablespoon of butter and let it melt.
Cut 1 lemon into thick chunks and add it to the skillet to caramelize.
Sauté the lemon chunks until they are caramelized on both sides, then remove them from the skillet.
Add 2 cloves of garlic and 1 cup of farro to the skillet and toast for 1 to 2 minutes until fragrant.
Pour in 1 and 1/3 cup of water and the juice of 1 lemon, then bring to a simmer.
Cook the farro until all the liquid evaporates and the farro is cooked through, keeping an eye on it.
In a food processor or blender, combine 4 ounces of feta cheese, 1/4 cup of plain Greek yogurt, and 1 tablespoon of olive oil; blend until smooth.
Once the farro is cooked, add 2 tablespoons of butter, fresh grated Parmesan, lemon zest, salt, and more lemon juice to taste; stir to combine.
Return the meatballs to the skillet to heat them through with the farro mixture.
Plate the dish by adding a scoop of whipped feta, then the lemon farro, and top with the lamb meatballs and caramelized lemon chunks.
Garnish with fresh dill and cracked pepper before serving.
