400 g cubed lamb
2 medium onions, sliced thinly
1 very large tomato, sliced thinly
juice of 1 lemon
100 g crumbled feta cheese
1.5 teaspoons dried oregano
0.25 teaspoons salt
0.25 teaspoons black pepper
2 bay leaves
1 tablespoon olive oil
a couple of tablespoons alcohol-free white wine

Mix together the lamb, lemon juice, salt, black pepper, and oregano in a bowl.

Cover and put in the fridge to marinate for about 4 hours.

Heat 1 tablespoon of olive oil in a pan.

Brown the marinated lamb in the pan on all sides for about 5 minutes.

Turn off the heat after browning the meat.

Take a piece of baking foil and add half the browned meat into the middle.

Top with half the sliced onions, half the sliced tomato, and half the crumbled feta cheese.

Dribble on a bit of the cooking juice and a couple of tablespoons of alcohol-free white wine.

Add a bay leaf on top.

Fold up the sides of the foil to create a parcel, then fold up the ends to seal it.

Repeat the process to create a second parcel with the remaining ingredients.

Place the two parcels into a baking tray.

Bake in an oven at 160°C for 2 hours.

After 2 hours, carefully open the parcel and slide the contents onto a plate.
