Curd Rice

2/3 cup white rice
Salt to taste
3/4 cup cold milk
1 cup yogurt/curd
1-2 tbsp oil
1/4 tsp mustard seeds
1/4 tsp cumin seeds
Optional green chili
10-12 fresh curry leaves
1/4 inch piece of freshly grated ginger
10-12 cashew nuts cut in halves
1/4 tsp red chili flakes (optional)
1/2 tsp hing / asafoetida
Fresh cilantro

Cook very soft rice.

Add salt to taste.

Once rice is fully cooked let it cool down.

Then add cold milk & mix it properly.

Whisk yogurt/curd to a smooth paste and then add it to the soft rice.

Combine rice and yogurt/curd.

Heat oil in a pan.

Then add cumin & mustard seeds.

Add grated ginger, green chili, chili flakes and curry leaves.

When the curry leaves turn crisp, add hing to the hot seasoning and stir, turn off the stove.

Pour the tempering to the curd rice and mix.

Garnish with green cilantro leaves and nuts.
