Curd Rice

3 cups cooked rice
2 cups yogurt
salt to taste
3 teaspoons oil
1/2 teaspoon mustard seeds
1 whole red chili
1/2 teaspoon Hing
1 teaspoon Chana dal
1 teaspoon Urad dal
1-2 green chilies finely chopped
1/2 teaspoon finely grated ginger
2 sprigs cilantro

Mash the cooked rice lightly.

If the rice is cold, warm it in the microwave for a couple of minutes.

Add salt and yogurt to the rice and mix well.

Taste the mixture and adjust salt; if too sour, add a little milk to cut down the tartness.

Heat oil in a pan over medium to high heat.

Add mustard seeds to the hot oil and wait for them to splutter.

Add the red chili and let it flutter.

Next, add Chana dal and Urad dal, cooking until golden brown.

Add Hing and grated ginger, followed by green chilies, and cook for about 30 seconds.

Switch off the stove and add curry leaves to the yogurt and rice mixture instead of cooking them in the seasoning.

Pour the seasoning over the yogurt and rice mixture and mix well.

Garnish with cilantro.
