Leek and Potato Soup

450 g sliced leeks
450 g peeled and diced potatoes
1 medium chopped onion
1 crushed clove of garlic
1 liter vegetable stock
200 ml milk
couple of tablespoons butter or margarine
pepper
salt
sage or thyme
freshly chopped chives

Melt a couple of tablespoons of butter or margarine in a pan.

Once the butter is melted and foamy, add in the leeks, onion, garlic, and potatoes. Mix well.

Pop on the lid and cook over low heat for 10 minutes.

After 10 minutes, take off the lid and give it a stir.

Pour in the vegetable stock and milk, and bring it to a boil.

Season with pepper, a bit of salt, and maybe a big pinch of sage or thyme. Stir it all in.

Simmer gently for about 15 minutes until the potatoes are tender.

Serve the soup as is, or use a blender to puree it for a smoother texture.

Bring back to the boil and serve, sprinkling on freshly chopped chives and stirring in some cream if desired.
