Leek and Potato Soup

2 tbsp (12g) butter or oil
2 garlic cloves, large, finely minced
1-2 leeks, white and pale green parts only sliced thinly (about 2 cups)
1 lb/500g potatoes peeled and diced into 1"/2.5cm cubes
500 ml/2 cups chicken or vegetable stock, low sodium (6 cups)
75 ml/1/3 cup cream, heavy/thickened or milk
1/2 tsp salt
1/4 tsp black pepper
1 thick slice bread, torn into crouton size pieces
1/2 tbsp melted butter, or olive oil

Chives, finely chopped
Extra cream, for garnish

Melt the butter or oil in a pot over medium heat.

Add the minced garlic and sauté until fragrant.

Add the sliced leeks and cook until softened.

Stir in the diced potatoes and cook for a few minutes.

Pour in the chicken or vegetable stock and bring to a boil.

Reduce heat and simmer until the potatoes are tender.

Stir in the cream or milk, salt, and black pepper.

For the croutons, toss the torn bread with melted butter or olive oil and a pinch of salt, then bake until golden.

Serve the soup garnished with chives and extra cream.
