Leek and Potato Soup

3 medium potatoes
2 leeks, cleaned and sliced
2 cloves garlic, minced
1/4 cup fresh dill, chopped

Preheat the oven to 200 fan or 220 regular (400 to 425 Fahrenheit).

Prep the potatoes by cutting them into equal bite-sized pieces.

Toss the potatoes with a generous amount of olive oil, salt, and pepper, ensuring the flat sides are facing down on a baking sheet.

Roast the potatoes in the oven for about 20 minutes or until crisp tender and golden brown.

Prep the leeks by cutting off the woody green tops, slicing them in half, and thinly chopping them, ensuring they are thoroughly washed.
