Leek and Potato Soup

2 tablespoons butter
1 large onion, chopped
3 medium potatoes, peeled and diced
2 leeks, cleaned and sliced
4 cups vegetable stock
1 cup milk

Chop the onion finely.

Peel and dice the potatoes.

Discard the outer leaves of the leeks and slice them.

Melt the butter in a saucepan.

Add the onions, potatoes, and leeks to the saucepan and stir to coat in the butter.

Cover and let it sweat on very low heat for about 15 minutes.
