Leek and Potato Soup

1 medium-sized potato
2 leeks
1 medium-sized onion
1 green chili
2 tablespoons oil
2 cloves garlic
2 pints veggie stock
2 bay leaves

Peel and chop the potato into even-sized cubes.

Chop the leeks and wash them thoroughly.

Thinly slice the onion.

Chop the green chili for heat.

Heat 2 tablespoons of oil in a pot.

Add the cleaned leeks and sliced onions to the pot.

Cook the leeks and onions under medium heat until they wilt down and are soft and tender.

Add 2 cloves of chopped garlic and the chopped chili to the pot.

Cook under low heat for a couple of minutes.

Add the chopped potatoes to the pot.

Pour in 2 pints of veggie stock and add 2 bay leaves.

Simmer under medium heat with the lid on until the potatoes fall apart easily.

Remove from heat and fish out the bay leaves.

Blend the soup until smooth.

Season to taste before serving.
