Leek and Potato Soup

1 cup milk
3 medium potatoes
2 tablespoons butter
1 cup celery, chopped
2 leeks, cleaned and sliced
4 cups water
1 teaspoon salt
1/2 teaspoon pepper

Melt the butter in a large pot.

Add the leeks and celery and sauté for 10 minutes over medium heat, stirring often.

Add one cup of water. Cover and cook for 10 more minutes.

Add the potatoes and another two cups of water. Cover and cook for 10 minutes.

Add the milk. Cover and cook for 10 more minutes or until the potatoes are just tender.
