Leek and Potato Soup

500 grams leeks
500 grams potatoes
1 onion
1 tablespoon oil
1 teaspoon mustard
3 garlic cloves
1.5 liters vegetable stock

Chop leeks into chunks.

Dice the onion.

Dice the garlic cloves.

Peel and chop potatoes into chunks.

In a saucepan over medium heat, add oil.

Add the diced onions, chopped leeks, and chopped potatoes to the saucepan and stir.

Cover the saucepan with a lid and reduce the heat to low.

Cook for 10 minutes, stirring occasionally to prevent sticking.

After 10 minutes, add 1 liter of vegetable stock to the saucepan.

Add the garlic and mustard, then stir.

Simmer for 15 minutes until all the vegetables are really soft.

Blend the soup using a hand blender or a stamp blender until smooth and creamy.
