Italian Chuck Roast

3 lbs chuck roast
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
4 carrots, chopped
3 stalks celery, chopped
2 cups beef broth
1 cup red wine
1 can (14.5 oz) diced tomatoes
2 tsp dried oregano
2 tsp dried basil
1 tsp salt
1/2 tsp black pepper
2 bay leaves
1 tbsp fresh parsley, chopped (for garnish)

Preheat the oven to 325°F (163°C).

In a large Dutch oven, heat the olive oil over medium-high heat.

Season the chuck roast with salt and pepper, then sear it in the hot oil until browned on all sides, about 4-5 minutes per side.

Remove the roast from the pot and set aside.

In the same pot, add the chopped onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.

Add the minced garlic and cook for an additional minute until fragrant.

Pour in the red wine and scrape the bottom of the pot to deglaze, allowing the wine to reduce for about 2-3 minutes.

Stir in the beef broth, diced tomatoes, oregano, basil, and bay leaves.

Cover the pot and transfer it to the preheated oven. Roast for 3-4 hours, or until the meat is tender and easily shreds with a fork.
